Description

Cheesy Broccoli Rice Casserole is a comforting dish made with rice, broccoli, and cheese, perfect for family dinners.

Ingredients

Scale
  • 2 cups cooked white rice
  • 2 cups fresh broccoli florets (or frozen, thawed)
  • 1 cup shredded cheddar cheese
  • 1 cup cream of mushroom soup (or homemade)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 cup breadcrumbs (optional for topping)
  • 2 tablespoons butter (for greasing and optional topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter.
  2. In a large mixing bowl, combine the cooked rice, broccoli florets, cheddar cheese, cream of mushroom soup, milk, garlic powder, onion powder, black pepper, and salt. Mix well until all ingredients are evenly combined.
  3. Pour the mixture into the prepared baking dish, spreading it evenly.
  4. If using breadcrumbs, sprinkle them evenly over the top of the casserole. Drizzle melted butter over the breadcrumbs for added flavor and crispiness.
  5. Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly, and the top is golden brown.
  6. Remove from the oven and let it cool for about 5 minutes before serving.

Notes

  • For added protein, mix in cooked chicken or turkey to the casserole before baking.
  • Substitute the cheddar cheese with mozzarella or pepper jack for a different flavor profile.
