Ingredients
Scale
- 1 cup cottage cheese
- 4 large eggs
- 3/4 cup butter (melted)
- 1 medium onion (finely chopped)
- Pinch of cayenne pepper
- 2 8.5-ounce packages cornbread mix
- 1 12-ounce package frozen chopped broccoli, thawed (and finely chopped)
- 1 1/2 cups of grated sharp cheddar cheese
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 375°F (190°C).
- Lightly grease a 9×13-inch baking dish or ovenproof skillet and set it aside.
Step 2: Prepare the Wet Ingredients
- In a large bowl, whisk together the cottage cheese, eggs, and melted butter until smooth.
- Stir in the onion and a pinch of cayenne pepper to enhance the flavor.
Step 3: Combine the Dry and Wet Ingredients
- Gradually add the cornbread mix to the wet ingredients, stirring gently until just combined. Avoid overmixing.
Step 4: Fold in the Broccoli and Cheese
- Gently fold the thawed, finely chopped broccoli into the batter.
- Stir in 1 cup of the grated sharp cheddar cheese, reserving the remaining ½ cup for topping.
Step 5: Pour and Top
- Pour the batter into the prepared baking dish, spreading it evenly with a spatula.
- Sprinkle the reserved ½ cup of cheddar cheese over the top.
Step 6: Bake the Cornbread
- Place the baking dish in the preheated oven and bake for 30–35 minutes, or until the top is golden brown.
- To check doneness, insert a toothpick into the center—if it comes out clean, it’s ready.
Step 7: Cool and Serve
- Allow the cornbread to cool in the pan for 5–10 minutes.
- Slice into squares and serve warm alongside soups, chili, or roasted meats.
Notes
- Broccoli Tip: Pat the thawed broccoli dry to prevent excess moisture from affecting the batter.
- Cheese Options: Feel free to substitute cheddar with Gouda, Monterey Jack, or your favorite cheese blend.
- Spice It Up: Add diced jalapeños or a dash of hot sauce for a spicy kick.
- Storage: Refrigerate leftovers in an airtight container for up to 3 days, or freeze individual slices for up to 2 months.
