Description

Rich, savory, and loaded with sharp cheddar cheese and nutrient-packed broccoli, this Cheesy Broccoli Cornbread Delight is a comforting side dish that elevates any meal. The creamy cottage cheese, buttery cornbread, and subtle hint of cayenne pepper make every bite irresistible. Perfect for family dinners, potlucks, or as a standalone treat!

Ingredients

Scale
  • 1 cup cottage cheese
  • 4 large eggs
  • 3/4 cup butter (melted)
  • 1 medium onion (finely chopped)
  • Pinch of cayenne pepper
  • 2 8.5-ounce packages cornbread mix
  • 1 12-ounce package frozen chopped broccoli, thawed (and finely chopped)
  • 1 1/2 cups of grated sharp cheddar cheese

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch baking dish or ovenproof skillet and set it aside.

Step 2: Prepare the Wet Ingredients

  1. In a large bowl, whisk together the cottage cheese, eggs, and melted butter until smooth.
  2. Stir in the onion and a pinch of cayenne pepper to enhance the flavor.

Step 3: Combine the Dry and Wet Ingredients

  1. Gradually add the cornbread mix to the wet ingredients, stirring gently until just combined. Avoid overmixing.

Step 4: Fold in the Broccoli and Cheese

  1. Gently fold the thawed, finely chopped broccoli into the batter.
  2. Stir in 1 cup of the grated sharp cheddar cheese, reserving the remaining ½ cup for topping.

Step 5: Pour and Top

  1. Pour the batter into the prepared baking dish, spreading it evenly with a spatula.
  2. Sprinkle the reserved ½ cup of cheddar cheese over the top.

Step 6: Bake the Cornbread

  1. Place the baking dish in the preheated oven and bake for 30–35 minutes, or until the top is golden brown.
  2. To check doneness, insert a toothpick into the center—if it comes out clean, it’s ready.

Step 7: Cool and Serve

  1. Allow the cornbread to cool in the pan for 5–10 minutes.
  2. Slice into squares and serve warm alongside soups, chili, or roasted meats.

Notes

  • Broccoli Tip: Pat the thawed broccoli dry to prevent excess moisture from affecting the batter.
  • Cheese Options: Feel free to substitute cheddar with Gouda, Monterey Jack, or your favorite cheese blend.
  • Spice It Up: Add diced jalapeños or a dash of hot sauce for a spicy kick.
  • Storage: Refrigerate leftovers in an airtight container for up to 3 days, or freeze individual slices for up to 2 months.
