  • 1/3 cup shredded mozzarella or sharp cheddar cheese
  • 2 eggs

Instructions

  1. Preheat the Oven

    • Preheat your oven to 375°F (190°C).
    • Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare the Broccoli

    • If using fresh broccoli, steam for 5–7 minutes until tender.
    • If using frozen broccoli, thaw completely and drain well.

  3. Sauté the Onion and Garlic

    • To the bowl, add almond meal (or breadcrumbs), Parmesan cheese, shredded mozzarella (or cheddar), and eggs.

    • Mix until the ingredients are fully combined and the mixture is slightly sticky.
  5. Shape the Fritters

    • Use your hands to form the mixture into small patties, approximately 2–3 inches in diameter.
    • Place the fritters on the prepared baking sheet, ensuring they don’t touch.
  6. Bake the Fritters

    • Bake in the preheated oven for 18–20 minutes, flipping halfway through to ensure even browning.
