Ingredients
Scale
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 small yellow onion (chopped)
- 12– ounce bag fresh or frozen broccoli
- 2/3 cup almond meal or ground almonds (use panko or regular bread crumbs for a non-gluten-free version)
- 1/2 cup grated Parmesan cheese
- 1/3 cup shredded mozzarella or sharp cheddar cheese
- 2 eggs
- Salt and pepper (to taste)
Instructions
-
Preheat the Oven
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper or lightly grease it with cooking spray.
-
Prepare the Broccoli
- If using fresh broccoli, steam for 5–7 minutes until tender.
- If using frozen broccoli, thaw completely and drain well.
- Chop the broccoli into small pieces and transfer to a large mixing bowl.
-
Sauté the Onion and Garlic
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and chopped onion. Cook for 3–4 minutes, stirring occasionally, until softened and fragrant.
- Remove from heat and add to the bowl with the broccoli.
-
Mix the Fritter Ingredients
- To the bowl, add almond meal (or breadcrumbs), Parmesan cheese, shredded mozzarella (or cheddar), and eggs.
- Season generously with salt and pepper.
- Mix until the ingredients are fully combined and the mixture is slightly sticky.
-
Shape the Fritters
- Use your hands to form the mixture into small patties, approximately 2–3 inches in diameter.
- Place the fritters on the prepared baking sheet, ensuring they don’t touch.
-
Bake the Fritters
- Bake in the preheated oven for 18–20 minutes, flipping halfway through to ensure even browning.
- The fritters are done when they are golden brown and crispy on the edges.
-
Serve and Enjoy
- Remove the fritters from the oven and let them cool slightly before serving.
- Serve warm with your favorite dipping sauces such as ranch, sour cream, or marinara.
Notes
- Moisture Control: If the broccoli has too much moisture, squeeze it out using a clean kitchen towel to ensure crispy fritters.
- Consistency: Adjust with almond meal or breadcrumbs if the mixture is too wet, or add a splash of milk if it’s too dry.
- Cheese Options: Experiment with feta, gouda, or Monterey Jack for unique flavor twists.
