Ingredients

Scale
  • 2 cups broccoli florets
  • 3/4 cup grated cheese (cheddar, mozzarella, or a mix)
  • 1 cup panko breadcrumbs
  • 1 small onion (finely chopped)
  • 1 teaspoon minced garlic
  • 2 medium eggs (beaten)
  • Salt and freshly ground black pepper (to taste)

Instructions

  • Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  • Prepare the Broccoli: Steam or boil the broccoli florets for 3–4 minutes until tender. Drain well and chop finely or pulse in a food processor until finely chopped but not mushy.
  • Mix Ingredients: In a large bowl, combine the chopped broccoli, grated cheese, panko breadcrumbs, onion, garlic, beaten eggs, salt, and pepper. Mix until fully combined.
  • Form the Balls: Scoop 1–2 tablespoons of the mixture and roll into balls. Place them on the prepared baking sheet, spacing them apart.
  • Bake: Bake for 18–20 minutes, flipping halfway through, until the broccoli balls are golden brown and crispy.
  • Serve: Let cool slightly before serving. Enjoy on their own or with dipping sauces like ranch or marinara.

Notes

  • Extra Crispiness: Broil for the last 2 minutes for an even crispier texture.
  • Cheese Variations: Try parmesan or gouda for different flavors.
  • Gluten-Free Option: Use gluten-free breadcrumbs for a gluten-free version.
  • Make-Ahead: Freeze uncooked balls for a quick, ready-to-bake snack later.
