- ½ teaspoon salt
- ¾ cup boiling water
- ¼ cup cold water
- ½ cup chopped green onions (scallions)
- ½ cup shredded cheese (cheddar, mozzarella, or your choice)
- 2–3 tablespoons vegetable oil, for cooking
Instructions
1. Prepare the Dough
- In a large mixing bowl, combine the all-purpose flour and salt.
- Gradually add the boiling water while stirring with a wooden spoon until the mixture forms a rough dough.
- Add the cold water and continue stirring until the dough fully comes together.
- Transfer the dough to a lightly floured surface and knead for about 5 minutes, or until smooth and elastic.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
2. Assemble the Pancakes
- Divide the dough into four equal portions.
- Roll out one portion of dough into a thin circle, approximately 8 inches in diameter.
- Sprinkle a quarter of the chopped scallions and shredded cheese evenly over the surface of the dough.
- Roll the dough tightly into a log, then coil the log into a spiral shape.
- Gently flatten the spiral with your hands, then roll it out again into a circle, about 6-7 inches in diameter.
- Repeat the process with the remaining portions of dough, scallions, and cheese.
3. Cook the Pancakes
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
- Place one pancake in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
- Remove the pancake from the skillet and drain on paper towels.
- Repeat with the remaining pancakes, adding more oil to the skillet as needed.
4. Serve
- Cut the pancakes into wedges and serve hot.
