For the Biscuits:

  • 3 cups all-purpose flour (spooned and leveled)
  • 1 tablespoon granulated sugar
  • 1 tablespoon + 1 teaspoon baking powder
  • 3/4 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon kosher salt
  • 1/2 cup of cold butter (equivalent to 1 stick, diced into small pieces)
  • 1 cup buttermilk (or whole milk)
  • 1 large egg
  • 2 cups sharp cheddar cheese (packed (about 8 ounces))

For the Garlic Butter Topping:

  • 1/4 cup butter (melted (1/2 stick))
  • 1 clove garlic (smashed and minced)
  • 1 tablespoon fresh parsley (chopped)

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper or applying a light coating of oil.
  2. Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, garlic powder, cayenne pepper, and kosher salt.
  3. Incorporate the butter: Add the chilled butter pieces to the dry ingredients. Using a pastry cutter or your fingertips, blend the butter into the flour mixture until it achieves a texture similar to coarse crumbs.
  4. Combine wet ingredients: In a separate bowl, whisk together the buttermilk and egg. Add this mixture to the dry ingredients and stir carefully until they are just blended together. Do not overmix.
  5. Add the cheese: Fold in the shredded cheddar cheese until evenly distributed throughout the dough.
  6. Shape the biscuits: Use a spoon or an ice cream scoop to drop about 1/4 cup portions of dough onto the prepared baking sheet, spacing them evenly apart.
  7. Bake: Place the biscuits in the preheated oven and bake for 12-15 minutes, or until the tops are golden brown.
  8. Prepare the garlic butter topping: While the biscuits are baking, melt the butter in a small saucepan. Incorporate the minced garlic and sauté for 1-2 minutes until it becomes aromatic. Take off the heat and mix in the chopped parsley.

  • To make your own buttermilk, mix 1 cup of milk with 1 tablespoon of vinegar or lemon juice and let it sit for 5 minutes.
