Ingredients

Scale

Vegetables:

  • 1 cauliflower (cut into florets)
  • 1 onion (chopped)
  • 1 carrot (grated)
  • 200 g mushrooms (chopped)
  • 1 zucchini (cut into small pieces)
  • Salt and pepper mixture (to taste)
  • 100 g cherry tomatoes (chopped)
  • 1 cucumber (grated)
  • Fresh dill (chopped)

Egg Mixture:

  • 4 eggs
  • 200 g sour cream
  • Salt (to taste)

Topping:

  • 100 g cheese (grated)
  • 60 g sour cream
  • 40 g mayonnaise
  • Salt and pepper mixture (to taste)
  • 2 cloves garlic (chopped)

Instructions

  1. Prepare the Vegetables: Preheat the oven to 375°F (190°C). Steam or blanch the cauliflower florets until just tender. Drain and set aside. In a large skillet, sauté the onion, mushrooms, carrot, and zucchini with a little olive oil. Season with salt and pepper and cook until softened. Remove from heat.
  2. Combine the Vegetables: In a large bowl, combine the cooked cauliflower, sautéed vegetables, cherry tomatoes, grated cucumber, and fresh dill. Mix gently to evenly distribute the ingredients.
  3. Make the Egg Mixture: In a separate bowl, whisk together the eggs, sour cream, and a pinch of salt. Pour this mixture over the vegetables and toss gently to coat.
  4. Assemble the Bake: Transfer the vegetable mixture to a greased baking dish. Spread it out evenly.
  5. Prepare the Topping: In a small bowl, combine the grated cheese, sour cream, mayonnaise, salt, pepper, and chopped garlic. Mix until smooth. Spread the topping evenly over the vegetable mixture in the baking dish.
  6. Bake the Dish: Place the dish in the preheated oven and bake for 25–30 minutes, or until the top is golden brown and bubbling.
  7. Serve: Let the bake cool slightly before serving. Garnish with additional fresh dill if desired. Serve as a standalone meal or pair it with a side salad or crusty bread.

  • Make it dairy-free by using plant-based sour cream and cheese.
