Instructions
- Prepare the Vegetables: Preheat the oven to 375°F (190°C). Steam or blanch the cauliflower florets until just tender. Drain and set aside. In a large skillet, sauté the onion, mushrooms, carrot, and zucchini with a little olive oil. Season with salt and pepper and cook until softened. Remove from heat.
- Combine the Vegetables: In a large bowl, combine the cooked cauliflower, sautéed vegetables, cherry tomatoes, grated cucumber, and fresh dill. Mix gently to evenly distribute the ingredients.
- Make the Egg Mixture: In a separate bowl, whisk together the eggs, sour cream, and a pinch of salt. Pour this mixture over the vegetables and toss gently to coat.
- Assemble the Bake: Transfer the vegetable mixture to a greased baking dish. Spread it out evenly.
