Description

These Cabbage Fritters with Sour Cream and Dill are crispy on the outside, soft on the inside, and packed with flavor. Fritters:

  • 1 medium cabbage, quartered and core removed
  • Water, enough to boil the cabbage
  • 1 onion, finely chopped
  • 1 garlic clove, minced
  • 2 eggs
  • 3 tbsp flour
  • ½ tsp baking powder
  • Salt and black pepper, to taste
  • Olive oil, for frying
  • Sunflower oil, for frying

Toppings:

  • 23 tbsp sour cream
  • Fresh dill, chopped
  • ½ lemon, for squeezing

Instructions

  • Boil the Cabbage
    • Bring a pot of salted water to a boil.
    • Add the quartered cabbage and boil for 5–7 minutes until tender.
    • Drain and let cool.
  • Chop and Squeeze the Cabbage
    • Finely chop or shred the cabbage.
    • Use a kitchen towel to squeeze out excess moisture.
  • Sauté the Onion and Garlic
    • Heat olive oil in a pan over medium heat.
    • Sauté the chopped onion until translucent, about 3 minutes.
    • Add minced garlic, cook for 30 seconds, and remove from heat.
  • Prepare the Fritter Batter
    • In a bowl, whisk eggs, salt, and black pepper.
    • Add the cabbage, sautéed onions, and garlic.
    • Sprinkle in flour and baking powder, mixing until well combined.
  • Pan-Fry the Fritters
    • Heat sunflower oil in a pan over medium heat.
    • Drop 2 tablespoons of batter per fritter and flatten slightly.
    • Cook for 3–4 minutes per side until golden brown and crispy.
    • Transfer to a paper towel-lined plate.
  • Serve with Sour Cream and Dill
    • Top warm fritters with sour cream, fresh dill, and a squeeze of lemon.
