- 8 ounces cheese tortellini
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh mozzarella balls, halved
- 1/4 cup fresh basil, chopped
- 1/4 cup red onion, finely diced
- 2 cloves garlic, minced
- 3 tablespoons balsamic vinegar
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook the cheese tortellini according to package instructions. Drain and rinse under cold water to cool. Set aside.
- In a large mixing bowl, combine the cherry tomatoes, mozzarella balls, basil, red onion, and garlic.
- In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper.
- Add the cooled tortellini to the mixing bowl with the vegetables. Pour the dressing over the top and gently toss to combine.
- Chill the pasta salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Serve cold or at room temperature, garnished with additional basil if desired.
Notes
- For added protein, consider mixing in grilled chicken or chickpeas.
- Substitute the cherry tomatoes with roasted red peppers for a different flavor profile.
