  • 2 ¼ cups Panko breadcrumbs, divided
  • 1 egg, lightly beaten
  • ½ cup all-purpose flour
  • 2 eggs, lightly beaten (for coating)

Instructions

  1. Prepare the Broccoli:

    • Bring a pot of salted water to a boil.
    • Blanch the broccoli florets for 2-3 minutes until bright green and slightly tender.
    • Drain and immediately plunge into ice water to stop the cooking process.
    • Once cooled, drain again and finely chop the broccoli.
  2. Make the Cheese Mixture:

    • In a large bowl, combine chopped broccoli, Colby cheese, cheddar cheese, Velveeta chunks, red pepper flakes, and 1 cup of Panko breadcrumbs.
    • Stir in 1 lightly beaten egg to bind the mixture together.

  4. Coat the Cheese Balls:

    • Set up a breading station with three bowls:
      1. Flour
