Ingredients

Scale
  • 1 head of broccoli (chopped)
  • Half of a large yellow onion (chopped (or use 1 small onion))
  • 5 slices of turkey bacon
  • 8 eggs
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • Pepper (to taste)

Instructions

1. Preheat the oven: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with a bit of olive oil or non-stick spray.

2. Cook the turkey bacon: In a large skillet over medium heat, cook the turkey bacon for 4-5 minutes per side, until crispy. Remove from the skillet, let it cool slightly, then chop into small pieces. Set aside.

3. Sauté the vegetables: In the same skillet, heat 1 tablespoon of olive oil. Add the chopped onion and sauté for 3-4 minutes until soft and translucent. Stir in the chopped broccoli and cook for 3-5 more minutes, until tender but still crisp. Season with garlic powder, salt, and black pepper. Remove from heat.

4. Prepare the egg mixture: In a large bowl, whisk together the eggs, salt, black pepper, and half of the shredded cheddar cheese. Stir in the cooked turkey bacon, sautéed onion, and broccoli.

5. Assemble the casserole: Pour the egg mixture into the prepared baking dish, spreading it out evenly. Top with the remaining cheddar cheese.

6. Bake the casserole: Place the dish in the preheated oven and bake for 25-30 minutes, or until the eggs are set and the top is golden brown.

7. Serve and enjoy: Let the casserole cool slightly before slicing. Serve warm and enjoy a healthy, protein-packed breakfast!
