Description

Take your grilled cheese game to a whole new level with this Brie Pesto Grilled Cheese. Creamy Brie melts beautifully between layers of crusty bread, while the basil pesto and tangy sun-dried peppers bring a burst of gourmet flavor. Perfect for a quick lunch or a cozy dinner, this sandwich will leave you craving more!

Ingredients

Scale
  • 4 slices sturdy bread (such as ciabatta)
  • 2 tablespoons soft butter (for brushing the bread)
  • 4 tablespoons DeLallo basil pesto
  • 5 ounces Brie cheese (thinly sliced)
  • 1/4 cup DeLallo Sweet and Tangy Sun-Dried Peppers (drained and chopped or roasted red peppers)

Instructions

  1. Prepare the bread: Spread a thin layer of soft butter on one side of each slice of bread. This will help create a golden, crispy crust when grilling.
  2. Assemble the sandwich: On the unbuttered side of two slices of bread, spread 2 tablespoons of basil pesto per slice. Layer the thinly sliced Brie cheese evenly over the pesto. Top with the chopped sun-dried or roasted red peppers.
  3. Grill the sandwich: Place the other slice of bread on top of each sandwich, buttered side facing out. Place the sandwiches in the skillet and grill for about 3-4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and crispy and the cheese is melted and gooey.
  4. Serve: Once the sandwiches are grilled to perfection, remove them from the skillet. Slice them in half and serve immediately while the cheese is still melty and warm.

Notes

  • For the best flavor, use fresh, high-quality ingredients like artisan bread, fresh pesto, and creamy Brie.
  • Adjust the amount of sun-dried peppers to suit your taste.
  • If you prefer, you can swap Brie with another soft cheese like Havarti or mozzarella.
