For the Filling:
- 2 cups fresh spinach, sautéed
- ½ cup shredded Parmesan cheese
- ½ cup shredded mozzarella cheese
- 1 clove garlic, minced
For the Sauce:
- 2 tablespoons unsalted butter
- 1 tablespoon lemon juice
Instructions
- Prepare the Filling
- In a skillet over medium heat, sauté spinach until wilted (about 2-3 minutes).
- Stir in minced garlic and cook for another 30 seconds.
- Remove from heat and mix with Parmesan and mozzarella cheese. Set aside.
- Season the Salmon
- Pat the salmon fillets dry.
- In a bowl, mix smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
- Rub olive oil on the fillets, then coat with the seasoning mix.
- Stuff the Salmon
- Use a sharp knife to cut a pocket into the side of each fillet.
- Stuff with the spinach and cheese mixture.
- Cook the Salmon
- Heat a skillet over medium-high heat and add olive oil.
- Sear the salmon for 3-4 minutes per side, until blackened and crispy.

- Melt butter in the same skillet over low heat.
