  • 1/4 teaspoon salt

Instructions

  • Prep the Zucchini
    Preheat the oven to 375°F (190°C). Slice zucchinis in half lengthwise and hollow them out with a spoon. Reserve the zucchini pulp and line the zucchini boats on a parchment-lined baking sheet.
  • Cook the Filling
    Heat olive oil in a skillet over medium heat. Sauté chopped onion for 2–3 minutes until golden. Add garlic and stir briefly. Add ground beef and cook until browned, breaking it apart with a spoon (about 3–5 minutes).
  • Season and Simmer
    Mix in marinara sauce, reserved zucchini pulp, Italian seasoning, salt, and pepper. Simmer for 8–10 minutes to blend flavors and reduce excess liquid.
  • Stuff the Zucchini
    Spoon the beef filling into each zucchini shell. Top with shredded cheese.
  • Bake
    Bake in the preheated oven for 15–20 minutes until the cheese is melted, bubbly, and golden.
  • Serve
    Let cool slightly before serving. Garnish with parsley or red pepper flakes if desired. Enjoy!
