Ingredients
Scale
- 6–8 medium zucchini (or 12 small), halved and hollowed
- 1 pound ground beef
- 1 tablespoon olive oil
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 cup marinara sauce
- 1 tablespoon Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup low-fat shredded cheddar or mozzarella cheese
Instructions
- Prep the Zucchini
Preheat the oven to 375°F (190°C). Slice zucchinis in half lengthwise and hollow them out with a spoon. Reserve the zucchini pulp and line the zucchini boats on a parchment-lined baking sheet. - Cook the Filling
Heat olive oil in a skillet over medium heat. Sauté chopped onion for 2–3 minutes until golden. Add garlic and stir briefly. Add ground beef and cook until browned, breaking it apart with a spoon (about 3–5 minutes). - Season and Simmer
Mix in marinara sauce, reserved zucchini pulp, Italian seasoning, salt, and pepper. Simmer for 8–10 minutes to blend flavors and reduce excess liquid. - Stuff the Zucchini
Spoon the beef filling into each zucchini shell. Top with shredded cheese. - Bake
Bake in the preheated oven for 15–20 minutes until the cheese is melted, bubbly, and golden. - Serve
Let cool slightly before serving. Garnish with parsley or red pepper flakes if desired. Enjoy!
