For the Beef:
- 1 large rib eye steak, thinly sliced
- 1 teaspoon baking soda
- 1 tablespoon cornstarch
- 2 tablespoons soy sauce
For the Stir Fry Sauce:
- 3 tablespoons oyster sauce
- 2 tablespoons soy sauce (low sodium)
- 1 teaspoon dark soy sauce
- 2 teaspoons sugar
- 2 teaspoons rice vinegar
- 1 teaspoon sesame oil
For the Stir Fry:
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 large onion, sliced
- 2-inch piece of ginger, julienned
- 8 ounces mushrooms, quartered
- 3 green onions, sliced
Instructions
1. Prepare the Beef:
- Thinly slice the rib eye steak against the grain for tenderness.
- In a bowl, combine the sliced beef with baking soda, cornstarch, and soy sauce. Mix well and marinate for at least 10 minutes.
2. Make the Sauce:
- In a small bowl, whisk together oyster sauce, soy sauce, dark soy sauce, sugar, rice vinegar, and sesame oil. Set the sauce aside.
3. Heat the Pan:
- Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
4. Cook the Beef:
- Add the marinated beef to the hot pan in a single layer. Sear for 2–3 minutes on each side until browned. Remove the beef from the pan and set aside.
5. Cook the Aromatics:
- In the same pan, add the remaining tablespoon of olive oil. Sauté the minced garlic, sliced onion, and julienned ginger for 1–2 minutes until fragrant.
6. Add the Mushrooms:
- Add the quartered mushrooms to the pan. Cook for 3–4 minutes, stirring occasionally, until softened and lightly browned.
7. Combine Everything:
- Return the cooked beef to the pan. Pour in the stir fry sauce and toss everything together. Cook for 2–3 minutes to allow the flavors to meld.
8. Add Green Onions:
- Stir in the sliced green onions and cook for another 30 seconds.
9. Serve:
- Serve hot over steamed rice or noodles. Garnish with additional green onions if desired.

- For the most tender beef, slice it as thinly as possible against the grain.
- If you prefer more sauce, double the stir fry sauce ingredients.
