Ingredients

Scale

For the Fritters

  • 5 cups chopped cauliflower florets
  • 2 large eggs
  • ½ cup all-purpose flour
  • ½ tsp baking powder
  • Salt and pepper to taste
  • Vegetable oil (for frying)

For Serving

  • Ranch dressing, sour cream, or spicy aioli (optional)

Instructions

  • Prepare the Cauliflower:

    • Bring a large pot of salted water to a boil.
    • Add the chopped cauliflower florets and cook for 5 minutes, or until tender.
    • Drain and let the cauliflower cool slightly, then roughly chop or mash it.
  • Make the Batter:

    • In a large mixing bowl, whisk the eggs until well beaten.
    • Add flour, baking powder, salt, and pepper, and mix well.
    • Stir in the chopped cauliflower, ensuring everything is well coated.
  • Heat the Oil:

    • In a large skillet, heat about ¼ inch of vegetable oil over medium-high heat.
    • The oil should be hot but not smoking—test by dropping a small amount of batter into the oil.
  • Fry the Fritters:

    • Using a spoon or scoop, drop spoonfuls of batter into the skillet.
    • Flatten them slightly with the back of the spoon.
    • Cook for 2-3 minutes per side, or until golden brown and crispy.
    • Remove and drain on paper towels to remove excess oil.
  • Serve & Enjoy:

    • Serve the fritters hot with your favorite dipping sauce.
    • Enjoy as a snack, side dish, or appetizer!
