Ingredients
Scale
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter (melted and cooled)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk (or 1 cup milk with 1 tablespoon vinegar)
- 1 1/2 cups fresh or frozen blueberries
Crumb Topping:
- 1/2 cup all-purpose flour
- 1/3 cup granulated sugar
- 1/4 cup unsalted butter (softened)
- 1 teaspoon cinnamon
- Pinch of salt
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In another bowl, whisk the melted butter, eggs, vanilla extract, and buttermilk until smooth.
- Make the Batter: Gradually add the wet ingredients to the dry ingredients. Stir until just combined. Toss blueberries with a tablespoon of flour to prevent sinking, then gently fold them into the batter.
- Prepare Crumb Topping: In a small bowl, mix flour, sugar, softened butter, cinnamon, and salt with a fork until crumbly.
- Fill Muffin Cups: Divide the batter evenly among the muffin cups, filling them about 3/4 full. Sprinkle crumb topping generously on each muffin.
- Bake: Bake in the preheated oven for 20–25 minutes or until a toothpick inserted into the center comes out clean.
- Cool: Allow muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Storage: Store muffins in an airtight container for up to 3 days or freeze for up to 3 months.
- Reheating: Warm muffins in the microwave for 15–20 seconds or in a 350°F (175°C) oven for 5 minutes.
- Customization: Add lemon zest for a fresh twist or mix in chopped nuts for extra crunch.
