  • 2 jalapeños, finely diced

  • 1 cup shredded cheddar cheese
  • 8 egg roll wrappers

Instructions

  • Cook the Bacon – In a skillet over medium heat, cook the bacon until crispy. Transfer it to a paper towel-lined plate to drain. Let it cool, then crumble it into small bits.

  • Prepare the Filling – In a mixing bowl, combine crumbled bacon, diced jalapeños, cream cheese, and shredded cheddar cheese. Mix well until evenly combined.

  • Assemble the Egg Rolls – Lay an egg roll wrapper on a clean surface with one corner pointing toward you (diamond shape). Place 2 tablespoons of the filling in the center. Fold the bottom corner over the filling, fold in the sides, and roll tightly. Dampen the edges with water to seal. Repeat with remaining wrappers.

  • Heat the Oil – In a small pan, heat about 1 inch of vegetable oil over medium heat until it reaches 350°F (175°C).

  • Fry the Egg Rolls – Carefully place the egg rolls into the hot oil, frying 2-3 minutes per side until golden brown. Flip as needed. Once crispy, transfer to a paper towel-lined plate to drain excess oil.
