  • ½ cup low-fat mayonnaise (115 grams)
  • 2 cloves garlic (minced)
  • 1 teaspoon lemon juice (5 ml)
  • ½ teaspoon hot smoked Spanish paprika (1.15 grams)
  • Pinch of sea salt
  • Dash of black pepper
  • Handful of finely chopped parsley (for garnish)

Instructions

  1. Prepare the Potatoes: Preheat your oven to 400°F (200°C). Place the cubed potatoes in a large bowl, drizzle with olive oil, and sprinkle with sea salt and black pepper. Toss until well coated.
  2. Roast the Potatoes: Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Roast for 25–30 minutes, turning halfway through, until golden and crispy on the outside.
  3. Make the Garlic Aioli: While the potatoes are roasting, combine the low-fat mayonnaise, minced garlic, lemon juice, and hot smoked Spanish paprika in a small bowl. Stir until smooth and well-blended. Adjust seasoning with a pinch of salt and additional lemon juice if desired.
  4. Serve and Garnish: Once the potatoes are crispy and done, transfer them to a serving plate. Drizzle or serve with the garlic aioli on the side and sprinkle with finely chopped parsley for garnish.
