Ingredients
Scale
- 3 medium-sized potatoes (cut into bite-sized cubes)
- 1 tablespoon extra virgin olive oil (15 ml)
- ½ cup low-fat mayonnaise (115 grams)
- 2 cloves garlic (minced)
- 1 teaspoon lemon juice (5 ml)
- ½ teaspoon hot smoked Spanish paprika (1.15 grams)
- Pinch of sea salt
- Dash of black pepper
- Handful of finely chopped parsley (for garnish)
Instructions
- Prepare the Potatoes: Preheat your oven to 400°F (200°C). Place the cubed potatoes in a large bowl, drizzle with olive oil, and sprinkle with sea salt and black pepper. Toss until well coated.
- Roast the Potatoes: Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Roast for 25–30 minutes, turning halfway through, until golden and crispy on the outside.
- Make the Garlic Aioli: While the potatoes are roasting, combine the low-fat mayonnaise, minced garlic, lemon juice, and hot smoked Spanish paprika in a small bowl. Stir until smooth and well-blended. Adjust seasoning with a pinch of salt and additional lemon juice if desired.
- Serve and Garnish: Once the potatoes are crispy and done, transfer them to a serving plate. Drizzle or serve with the garlic aioli on the side and sprinkle with finely chopped parsley for garnish.
Notes
- Vegan Version: Swap mayonnaise with vegan mayo for a plant-based aioli.
- Customizable Heat: Add a pinch of cayenne pepper for an extra spicy kick.
- Storage Tips: Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat in the oven to retain crispiness.
