Description

Creamy, sweet, and tangy, this Authentic Amish Creamed Celery is a traditional side dish that’s perfect for holidays, special dinners, or whenever you want a comforting and flavorful addition to your table. Tender celery is smothered in a velvety sauce made with evaporated milk, a touch of sugar, and tangy vinegar for a taste that’s uniquely Amish and undeniably delicious.

Ingredients

Scale
  • 1 quart celery (about 1 stalk, cut into pieces)
  • ½ teaspoon salt
  • ¾ cup water
  • 2 tablespoons granulated sugar
  • 1 ½ teaspoons white vinegar
  • 1 tablespoon butter
  • ½ to ¾ cup evaporated milk (depending on desired creaminess)
  • 2 to 3 tablespoons brown sugar (adjust to taste)
  • 1 tablespoon all-purpose flour

Instructions

  1. Cook the Celery: In a medium saucepan, combine the cut celery, salt, and water. Bring the mixture to a boil, then lower the heat and let it simmer until the celery becomes tender, about 10-15 minutes. Drain and set aside, reserving a few tablespoons of the cooking liquid.
  2. Make the Sauce: In the same saucepan over medium heat, add the butter and let it melt. Add the flour and cook for 1-2 minutes, stirring constantly to create a smooth roux. Gradually whisk in the evaporated milk until smooth, adjusting the amount of milk for desired creaminess.
  3. Add Flavorings: Add the granulated sugar, brown sugar, white vinegar, and reserved cooking liquid from the celery. Stir continuously until the sauce thickens and reaches a creamy consistency.
  4. Combine and Serve: Return the cooked celery to the saucepan, folding it gently into the sauce until well coated. Taste and adjust sweetness with additional brown sugar, if desired.

Notes

  • Texture Tip: For a thicker sauce, use less evaporated milk. For a thinner sauce, add more milk or reserved cooking liquid.
  • Flavor Adjustments: Balance the sweetness and tang to your liking by experimenting with the amount of brown sugar and vinegar.
  • Make Ahead: This dish can be prepared a day in advance and reheated gently on the stove with a splash of milk to refresh the sauce.
