Ingredients

Scale

For the Slaw:

  • 4½ cups red apples, thinly sliced into bite-sized pieces
  • 3 cups green cabbage, finely shredded

For the Dressing:

  • 1 cup sour cream
  • 3 tablespoons freshly squeezed lemon juice
  • 1 tablespoon granulated white sugar
  • 1 tablespoon poppy seeds
  • ¾ teaspoon salt
  • ⅛ teaspoon freshly ground black pepper

Instructions

  • Prepare the Ingredients – Wash and slice the apples into thin, bite-sized pieces. Shred the cabbage finely using a sharp knife, mandoline, or food processor.
  • Make the Dressing – In a medium bowl, whisk together the sour cream, lemon juice, sugar, poppy seeds, salt, and black pepper until smooth.
  • Combine Everything – In a large bowl, toss the sliced apples and shredded cabbage. Pour the dressing over the slaw and mix well to coat all ingredients evenly.
  • Chill & Serve – Let the slaw sit in the refrigerator for 15-20 minutes to allow the flavors to meld. Serve cold and enjoy!

Notes

  • For extra sweetness, add a handful of raisins or dried cranberries.
  • For added crunch, toss in some chopped pecans or walnuts.
  • Make it dairy-free by replacing sour cream with coconut yogurt or vegan mayo.
  • Best served fresh, but can be stored in an airtight container in the refrigerator for up to 24 hours.
