Ingredients

Scale
  • 200 g (7.1 oz) puff pastry
  • 4 apples, peeled, cored, and sliced
  • 20 g (0.7 oz) butter
  • 10 g (0.4 oz) cinnamon
  • 30 g (1.1 oz) brown sugar
  • 200 g (7.1 oz) granulated sugar
  • 100 ml (3.4 fl oz) water
  • 20 ml (0.7 fl oz) fresh lemon juice
  • 7 g (0.2 oz) salt
  • 200 ml (6.8 fl oz) heavy cream
  • 80 g (2.8 oz) powdered sugar
  • 300 g (11 oz) whipping cream (for extra topping)

Instructions

Step 1: Prepare the Apples

  1. In a large pan, melt the butter over medium heat.
  2. Add the apple slices, cinnamon, and brown sugar. Stir to coat the apples evenly.
  3. Cook for 5-7 minutes until the apples are tender and caramelized. Remove from heat and set aside.

Step 2: Prepare the Caramel Sauce

  1. In a small saucepan, combine granulated sugar, water, and lemon juice.
  2. Heat over medium heat, stirring occasionally, until the sugar dissolves and turns golden brown. Be careful not to burn the caramel.
  3. Remove the pan from heat and stir in the salt. Allow the caramel sauce to cool slightly.

Step 3: Bake the Puff Pastry

  1. Preheat your oven to 200°C (390°F).
  2. Roll out the puff pastry and cut it into squares or strips, depending on your desired shape.
  3. Place the pastry pieces on a lined baking sheet and bake for 10-12 minutes or until golden brown and puffed. Set aside to cool.

Step 4: Prepare the Whipped Cream

  1. In a mixing bowl, whip the heavy cream and powdered sugar until soft peaks form.
  2. In another bowl, whip the extra whipping cream until stiff peaks form. Reserve for topping.

Step 5: Assemble the Dessert

  1. Place a piece of baked puff pastry on a serving plate.
  2. Top with caramelized apples and drizzle caramel sauce over them.
  3. Add a dollop of whipped cream and serve with extra whipped cream on the side for indulgence.

Notes

  • Make It Ahead: You can prepare the caramel sauce and caramelized apples ahead of time. Store them separately in airtight containers in the refrigerator.
  • Serve Fresh: Assemble the dessert just before serving to keep the puff pastry crisp.
  • Customize the Apples: Add a pinch of nutmeg or cloves for a warm, spiced flavor.
  • Chill the Cream: Use chilled cream and a cold bowl for the best whipped cream results.
