  • 500g (17.64 oz) puff pastry
  • 200g (7 oz) pastry cream
  • 150g (5.3 oz) whipping cream
  • 50g (1.76 oz) chopped almonds

Optional for Garnish:

  • Powdered sugar for dusting
  • Simple glaze (icing sugar + milk)

Instructions

  • Preheat the Oven – Set your oven to 180°C (356°F) and line a baking tray with parchment paper.
  • Prepare the Pastry – Roll out the puff pastry on a lightly floured surface to about 3mm thick. Cut into squares 10cm x 10cm (4in x 4in).
  • Make the Cream Filling – In a bowl, whisk together pastry cream and whipping cream until smooth and fluffy.
  • Assemble the Croissants – Place 1 tablespoon of the cream mixture in the center of each pastry square and sprinkle with chopped almonds.
  • Shape the Croissants
    • Envelope Shape: Fold the corners over the filling and pinch to seal.
    • Crescent Shape: Wrap the squares over the back of a tablespoon for a classic croissant curve.
  • Bake – Arrange on the prepared baking tray and bake for 25-30 minutes until golden brown and flaky.
  • Final Touch – Allow to cool slightly, then dust with powdered sugar or drizzle with a light glaze before serving.
