Instructions
- Preheat the Oven – Set your oven to 180°C (356°F) and line a baking tray with parchment paper.
- Prepare the Pastry – Roll out the puff pastry on a lightly floured surface to about 3mm thick. Cut into squares 10cm x 10cm (4in x 4in).
- Make the Cream Filling – In a bowl, whisk together pastry cream and whipping cream until smooth and fluffy.
- Assemble the Croissants – Place 1 tablespoon of the cream mixture in the center of each pastry square and sprinkle with chopped almonds.
- Shape the Croissants –
- Envelope Shape: Fold the corners over the filling and pinch to seal.
- Crescent Shape: Wrap the squares over the back of a tablespoon for a classic croissant curve.
- Bake – Arrange on the prepared baking tray and bake for 25-30 minutes until golden brown and flaky.
