- 2 cups grated zucchini (about 2 medium zucchinis)
- 1 teaspoon salt
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon garlic powder

- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 cup shredded cheddar cheese
- 2 large eggs
- 1/4 cup olive oil
- 1/4 cup milk
- 1/4 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove as much liquid as possible.
- In another bowl, whisk together the flour, baking powder, baking soda, garlic powder, onion powder, black pepper, and crushed red pepper flakes (if using).
- In a separate bowl, beat the eggs, then add the olive oil and milk. Mix until well combined.
- Stir the dry ingredients into the wet ingredients until just combined. Fold in the squeezed zucchini, cheddar cheese, Parmesan cheese, and parsley (if using) until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Notes
- For a twist, add 1/2 cup of cooked and crumbled bacon or diced ham for extra flavor.
- Substitute half of the all-purpose flour with whole wheat flour for a healthier option.
