- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 4 hot dog buns
- Cooking oil for frying
- Ketchup and mustard for serving
Instructions
- Begin by peeling the russet potatoes and cutting them into quarters. Place them in a pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes. Drain and let cool slightly.
- In a large bowl, mash the cooked potatoes until smooth. Stir in the shredded cheddar cheese, crumbled bacon, chopped green onions, garlic powder, onion powder, salt, and pepper until well combined.
- Divide the potato mixture into four equal portions. Shape each portion around a hot dog, ensuring the potato mixture fully encases the hot dog.
- Heat about 1 inch of cooking oil in a deep skillet over medium heat. Once the oil is hot, carefully add the potato-wrapped hot dogs, cooking in batches if necessary. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
- Serve the Idaho potato dogs in hot dog buns with ketchup and mustard on the side.

- For a spicier kick, add diced jalapeños or a pinch of cayenne pepper to the potato mixture.
