- 8 ounces fettuccine or spaghetti
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced (such as cremini or button)
- 1 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup vegetable broth or pasta cooking water
- 1/4 cup heavy cream
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (plus extra for serving)
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Cook the fettuccine or spaghetti according to package instructions in a large pot of salted boiling water. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the sliced mushrooms to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are browned and tender.
- Stir in the dried thyme and red pepper flakes (if using), and cook for another minute.
- Pour in the vegetable broth or reserved pasta water, and bring to a simmer. Let it cook for 2-3 minutes to reduce slightly.
- Lower the heat and stir in the heavy cream, mixing well. Season with salt and pepper to taste.
- Add the cooked pasta to the skillet and toss to combine, ensuring the pasta is well coated with the sauce.
- Stir in the grated Parmesan cheese until melted and creamy.
- Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.

- For a lighter version, substitute heavy cream with unsweetened almond milk or a plant-based cream alternative.
- Add cooked chicken or shrimp for extra protein, or toss in some spinach or kale for added greens.
