- 1 pound ground beef
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup breadcrumbs
- 1 large egg
- 2 cups marinara sauce
- 4 cups mashed potatoes (prepared, about 2 pounds of potatoes)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the ground beef, garlic powder, onion powder, Italian seasoning, salt, pepper, breadcrumbs, and egg. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter. Place the meatballs on a baking sheet and bake for 20 minutes, or until cooked through.
- In a 9×13 inch baking dish, spread half of the marinara sauce on the bottom. Arrange the cooked meatballs evenly over the sauce.
- Spoon the mashed potatoes over the meatballs, spreading them out evenly. Drizzle the remaining marinara sauce over the mashed potatoes.
- Sprinkle the mozzarella and Parmesan cheese on top of the mashed potatoes.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes. Garnish with chopped parsley if desired before serving.
Notes
- For a spicier kick, add red pepper flakes to the meatball mixture.
- Substitute ground turkey or chicken for a leaner option, and use cauliflower mash for a low-carb alternative.
